*Ham Yard Hotel
Ham Yard was previously a deserted ¾ acre site, before Firmdale Hotels transformed the area into an all-new village connecting Great Windmill and Denman Streets via a tree-filled public thoroughfare.
Food is sourced on flavour, and during the summer months 80% of the hotel’s fruit and veg is sourced from the UK. The kitchen tries to use UK produce as much as possible with milk sourced is from a small farm in Lancashire that have a higher selenium content than the normal over processed milks available, all of the eggs are organic, 70% of fish is caught of the south coast on day boats, and meat is farmed in small parts of the west country, Ireland and Scotland.
The Ham Yard Hotel also uses its roof top garden produce for use in the restaurant and the events kitchen, which includes a herb garden and beehives.
From an energy perspective, Ham Yard has an ‘excellent’ Energy Performance Rating. Some of the strategies used in the building include a water monitoring device to avoid water leakage of excessive usage inside the hotel, dual flush toilets to reduce water usage, native plants for green roof and landscaping, insulation for excellent thermal performance, air source heat pumps for cooling and heating the building and photovoltaic panels are installed on the roof to generate additional electricity.
